Research Summary

My research interests have been as follows: 1) physical chemistry of macromolecules; 2) human milk proteins and particularly the casein system, including the protein-protein interactions leading to the structure and function of casein micelle suspensions. Casein structural studies leading to the formation of reconstituted micelles will lead to a successful model for human casein micelles, which appears to be quite different from the bovine system.

The isolation, purification, and structural studies of the proteins found in human milk are important to the nutritional understanding of what a baby needs for digestion, nutrient absorption, and development after birth. In particular, peptides derived from these proteins show different bioactivities, with numerous physiological and/or pharmacological effects on body functions.
