Salad with Oranges and Walnuts
In this recipe, oranges combine with arugula and chopped walnuts to give you contrasting flavors and textures and still keep the fat content low.
2 cups romaine lettuce, coarsely chopped (about 6 leaves)
1 cup arugula
2 navel oranges, peeled and chopped
2 Tbsp. walnuts, chopped
1 Tbsp. walnut oil
1 cucumber, peeled, quartered lengthwise, seeds removed, chopped
1/4 cup red onion, thinly sliced
1 Tbsp. red wine vinegar
1 ounce blue cheese
Layer ingredients (except walnut oil, vinegar, and blue cheese) in a large salad bowl. Just before serving, sprinkle with walnut oil and vinegar and toss. Crumble blue cheese on top. Serves 4.
