Mediterranean Bean Dip
Heart healthy food
Adapted from Vegetarian Journal January/February 2001.
15-Oz can cannellini beans, well rinsed and drained
1 clove garlic, chopped
2 tablespoons very finely grated fresh lemon peel
2 tablespoons freshly squeezed
lemon juice
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried rosemary
1 tablespoon water
Combine all ingredients in a food processor or blender and pulse until a smooth paste is formed. Pour into a bowl and refrigerate for at least one hour prior to serving to allow flavors to combine. Serves about 12.
