Mango Brulee with Pine Nuts
2 cups cubed fresh mango (about 3 fruit), papaya (about 2 medium fruit), or peaches (about 4 medium fruit). Or try a combination of any of the fruits. Unsweetened frozen or canned fruit may also be used.
2/3 cup nonfat sour cream*
2 tablespoons pine nuts**
2 tablespoons light brown sugar
Preheat broiler. Place fruit in the bottom of a 9-inch pie pan. Stir sour cream and dollop over fruit. Use the back of a spoon to spread sour cream evenly. Sprinkle with pine nuts and brown sugar. Broil 4 to 6 inches from the heat for 1 to 2 minutes, or until sugar melts and pine nuts toast (watch nuts closely to avoid burning).
Serve immediately. Serves 4.
*If using reduced-fat, regular sour cream, or a sour cream substitute, fat content will be greater.
**Pine nuts are available at Trader Joe's or at other health food stores.
