Oat Bran Muffins
Oat bran muffins are a good way to increase your intake of soluble fiber, which is known to lower cholesterol.
2 1/2 cups raw oat bran
1/2 cup walnuts or pecans, chopped
1/4 cup raisins
1 tablespoon baking powder
1/4 cup brown sugar, packed
1 teaspoon cinnamon (optional)
1/4 teaspoon salt
1 cup nonfat milk or soymilk
2 egg whites, slightly beaten
2 tablespoons soybean or canola oil
1 medium apple, grated
Preheat oven to 425 degrees. Combine dry ingredients. Combine liquid ingredients and apple. Add to dry ingredients and blend. Fill prepared muffin cups and bake 15 to 17 minutes or until golden brown. Makes 12 muffins.
