Banana Bread
1 cup whole wheat pastry flour1 cup white flour, barley flour or brown rice flour
1/4 cup brown sugar
1 cup chopped walnuts
1/2 cup chopped dates
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. light salt
1 1/2 cups mashed bananas (about 3 bananas)
1 egg white or egg replacement
1/4 cup + 2 Tbsp. unsweetened applesauce
2 tsp. fresh lemon juice
1 tsp. vanilla extract
Mix together all the dry ingredients (first 8 ingredients) in a large bowl.
In a small bowl, combine the
remaining ingredients and stir. Mix together the dry and the wet ingredients.
Pour into (2) 8x4x3 inch loaf pans that have been sprayed with vegetable spray.
Bake at 350º for about 1 hour or until a toothpick inserted in the center comes
out clean. Slice each loaf into 12 pieces.
