4 WHOLE WHEAT PITA BREADS
4 MEDIUM TOMATOES (A TOTAL OF 16 1/4-INCH
SLICES)
1 1/2 CUPS PART-SKIM MOZZARELLA CHEESE (ABOUT 6 OZ.)
1/4 CUP
PARMESAN CHEESE
1/4 CUP CHOPPED ONION
1/2 CUP SLICED MUSHROOMS
1/4 CUP
CHOPPED GREEN BELL PEPPER
2 TSP. DRY OREGANO LEAVES
Step 1:
Preheat oven to 375 degrees. Separate pitas into 2 rounds by piercing around the
circumference with the tines of a fork and gently prying apart. Place them on a
baking sheet.
Step 2: Cover each round of bread
with 4 tomato slices, 2-3 tablespoons mozzarella, 1/2 tablespoon Parmesan
cheese, 1/4 teaspoon oregano, and vegetables.
Step 3: Bake for
10 minutes.
