Nutrition department chair edits book on vegetarian nutrition and includes chapters by LLU faculty

A new book, Vegetarian Nutrition, was recently published by CRC Press as part of the "Modern Nutrition" textbook series.
Joan Sabaté, MD, DrPH, chair of the department of nutrition, School of Public Health, was asked to serve as editor of the book. Dr. Sabaté invited a number of LLU faculty to write various chapters for the new book.
These include Glen G. Blix, DrPH, associate professor of health promotion and education, School of Public Health; Sujatha Rajaram, PhD, assistant professor of nutrition, School of Public Health; Pramil N. Singh, DrPH, assistant professor of epidemiology and biostatistics, School of Public Health; Patricia K. Johnston, DrPH, MS, RD, dean, School of Public Health; Richard W. Hubbard, PhD, associate professor of pathology and human anatomy, School of Medicine; Elaine Fleming, MPH, RD, assistant professor of nutrition, School of Public Health, and assistant professor, nutrition and dietetics, School of Allied Health Professions; Ella Haddad, DrPH, MS, RD, associate professor of nutrition, School of Public Health; Crystal G. Whitten, MS, RD, assistant professor of nutrition and dietetics, School of Allied Health Professions; Mark Carr, PhD, assistant professor of religion, Faculty of Religion; and Gerald R. Winslow, PhD, dean, Faculty of Religion, and special assistant to the chancellor.
Mervyn G. Hardinge, MD, PhD, DrPH, former dean of the School of Public Health, was invited to write the prologue. Dr. Sabaté plans to use the textbook as a resource in a number of the courses he teaches.
