Vegetarian congress proceedings published in nutrition journal

The proceedings were published by the American Journal of Clinical Nutrition as a supplement to the September, 1999, issue. This is the third time the proceedings have been published by the journal, which is one of the most prestigious nutrition journals. Dr. Johnston served as co-editor with Patricia Mutch, PhD, professor of nutrition, and dean, College of Arts and Sciences, Andrews University, Berrien Springs, Michigan, for the first proceedings published in 1988; editor of the second published in 1994; and recruited Dr. Sabaté to serve as coeditor on the third. The proceedings, as did the congress, recognized the major roles played by two former Loma Linda University faculty members--U.D. Register, PhD, long-time chair of the School of Public Health department of nutrition, and Mervyn Hardinge, MD, DrPH, PhD, first dean of the School of Public Health. The proceedings were dedicated to the memory of Dr. Register who died shortly after the congress, and recognized the many contributions of Dr. Hardinge to vegetarian nutrition. Both men were pioneers in researching vegetarian diets and did much to validate the nutritional adequacy of vegetarian diets. Both persevered in spite of encountering many obstacles along the way and both recognized the importance of sharing scientific findings with the public. In the tradition of the first two congresses, the third congress included presentations by highly respected researchers from around the world. Similarly, attendees came from many countries to hear topics ranging from the relationship of plant foods and health, to life-cycle issues, to the results of intervention studies. Plans are underway for the fourth congress to be held in 2002.
