Nutrition and dietetics unveils promotional video
The department of nutrition and dietetics, School of Allied Health Professions,
premiered its new promotional video, “Careers in Dietetics,” to a
group of faculty, staff, students, and friends of the department on November
6.
The 13-minute video was produced as a marketing tool to recruit undergraduate
student dietitians and dietetic technicians. It features alumni and friends of
the program, including Chau Dang, RD, owner of Bamboo Bistro, Corona del Mar;
Donna Galluzzo, PhD, RD, COO of Homecare Management Strategies, Inc., Wallingford,
Connecticut; Lori Langford, aquatics manager at Drayson Center, Loma Linda; Carla
Lyder, RD, supervisor of nutrition services, San Bernardino; Cody Mason, RD,
assistant director, nutrition services for Hemet Unified School District, Hemet;
and JeJe Novel, RD, transplant dietitian for LLUMC.
The video begins by posing the question “Are you happy with your job?” Using
humor to attract the attention of a younger audience, the video also aims at
showcasing the unique and rewarding benefits of a dietetics career.
Dr. Galluzzo, who received her nutrition bachelor’s degree in 1982 and
her master’s degree in 1984, explains in the video how Loma Linda University’s
program prepared her for a successful career.
The video was possible due to a generous gift in honor of the 80th anniversary
of the bachelor’s degree in nutrition and dietetics at Loma Linda University.
Each of the Adventist Health Systems contributed significantly to the gift, in
hopes of recruiting graduates of the program to fill dietitian positions in their
facilities.
Friends and alumni of the department also responded positively to the program’s
need for effective marketing and recruiting solutions. The three living members
of the class of 1952 gave $50,000 through the leadership of Paul Damazo, MS,
RD. He, along with Georgia Hodgkin, EdD, RD, FADA, associate professor, department
of nutrition and dietetics, led the campaign which raised $160,000 in three months.
Both Mr. Damazo and Dr. Hodgkin have supported Loma Linda University through
the years. Mr. Damazo served as chair of the University Councilors, when significant
dollars were raised for the School of Dentistry. During Dr. Hodgkin’s term
as president of the alumni federation, she initiated the “Loma Linda University
Comes to You” program in which administrators and faculty spend weekends
with alumni around the country bringing University updates and continuing education
to them.
The department is also thankful for the help of Renate Krause, PhD, director
of advancement, School of Allied Health Professions, for supporting and helping
to build the 80th anniversary marketing and recruiting fund.
Writer and producer of the video was Janis Tucker, RN, media specialist, Audio
Visual Communications, LLUMC. Dr. Hodgkin served as executive producer, Robert
Raae-Nielsen was videographer and editor, and Richard Duerksen provided narration.
Bert Connell, PhD, RD, FADA, chair of the department of nutrition and dietetics,
was the video’s content specialist. Additional camera and editing was provided
by Marlon Paley, Gary Eldridge, and Ed Meadows.
Copies of the video will be made available to alumni who may take it to academies
and high schools to augment their speaking to groups regarding the rewards they
found in their careers. Academy, high school, college, and university career
counselors will receive copies. When digitized, it may be found on the University

During a reception held Wednesday, October 29, faculty and friends
of the department of nutrition and dietetics, School of Allied Health
Professions, celebrated the completion of the Loma Linda University Diet
Manual, a handbook supporting vegetarian nutrition.
Editor of the manual, Georgia Hodgkin, EdD, RD, FADA, associate professor, department
of nutrition and dietetics, led an editorial committee in preparing the 950-page
book. Other members of the committee are Carol Baker, MS, RD; Kenneth I. Burke,
PhD, RD; Bert Connell, PhD, RD, FADA; Michael Maloney, MD; Susan Maloney, MS,
RD; and Maxine J. Taylor, MS, RD.
Thirty-six authors and 34 reviewers assisted in producing the manual. Registered
dietitians, nutrition and dietetics department professors, and clinical faculty
wrote chapters covering a variety of dietary topics. It was reviewed by board-certified
specialists in the School of Medicine.
“I am deeply indebted to the authors,” Dr. Hodgkin said at the reception. “Susan
Maloney and Michael Maloney are to be thanked for their excellent formatting
of the entire volume.”
This comprehensive vegetarian diet manual is a useful aid to nutritionists and
dietitians worldwide. Dr. Connell, chair of the department of nutrition and dietetics,
plans to take a copy on an upcoming trip to Africa.
“This manual will serve well for professors, students, and others who buy
it,” Dr. Connell relates. “This document represents our current understanding
of nutrition and dietetics, and represents a body of knowledge which has increased
significantly through the years.”
The first edition of the diet manual was written in 1945 by dietitians in what
was then the School of Nutrition and Dietetics and dietitians practicing at White
Memorial Hospital. It was the first diet manual published in the world based
on a vegetarian meal plan. The unique focus of that publication remained through
seven editions, growing from just 100 pages to a document of more than 950 pages.
As the science of nutrition has advanced, new approaches to dietary interventions
have been rapidly uncovered.
“When the first edition was written, vitamin B12 wasn’t even discovered
yet,” Dr. Hodgkin shares.
Up-to-date and state-of-the-art vegetarian recommendations relate to the entire
spectrum of medical practice: heart disease, cancer, renal disease, diabetes,
pregnancy, pediatrics, gastrointestinal disease, geriatrics, and nutritional
support. Guidelines are given for normal nutrient needs throughout the life cycle.
The manual also includes the nutrient analysis and ingredients for more than
100 meat alternative products. Professionals can also find guidelines for clients
and patients who prefer meat.
As vegetarian diets become the choice of a growing number of the public, the
manual will prove invaluable to health-care practitioners.
“Many people are using this handbook, and our diet manual will have quite
an audience,” Dr. Hodgkin says.
It has gone to every Seventh-day Adventist hospital in the United States, and
is used not only throughout the Adventist health system, but also at Harvard
University, Yale University, and Stanford University.
The manual is available in a three-ring binder with an accompanying CD-ROM of
the entire handbook.
Pre-publication prices for the Loma Linda University Diet Manual are $95 (diet
manual, CD, three-ring binder), and $90 (diet manual, CD). Shipping and handling
is $8 (add $6.50 per book). A site license for five computers is available for
$250.
