In addition to an excellent academic program, the Department of Nutrition has a significant program in research. Our research is focused primarily on vegetarian nutrition and on the nutritional aspects of tree nuts. Many helpful resources have been developed from our research, and we are happy to share them with you.

Nut Studies

For information on our current and previous studies on tree nuts follow this link www.nutstudies.org. This will give you an overview of the research that has been conducted and will provide a link to any publications and abstracts that are available.

Vegetarian Nutrition

Many valuable resources have arisen from our extensive research in the area of vegetarian nutrition.

  • The most comprehensive body of work on vegetarian nutrition can be found in the website from the International Congress on Vegetarian Nutrition. Held every five years, the Vege Congress convened in March 2008 with a record attendance of 700. Representatives from 44 countries met to share the most current findings, practical applications and implications of the vegetarian diet in both the prevention of disease and the promotion of health. The website will provide access to the program from the 5th congress and the program and proceedings from the earlier congresses in addition to some helpful resources.   • The following books may be a helpful resource to those interested in vegetarian nutrition:

Vegetarian Nutrition, edited by Dr. Joan Sabaté (Sabaté J, Ed. Vegetarian Nutrition. CRC Press, Boca Raton, FL, 2001, 551 pages, ISBN 0-8493-8508-3) contains expert summaries of various aspects of plant-based, or meatless, diets. It provides not only ethical, moral, and religious viewpoints from different periods of history but also modern perspectives on health promotion and disease prevention. Nutrición Vegetariana the Spanish language edition of Vegetarian Nutrition has recently been published (Sabaté J. Nutrición Vegetariana. Editorial Safeliz, Madrid, Spain, 2005, 556 pages, ISBN 84-7208-119-2). The link will take you to one of the websites from which the book can be purchased.

Frutos Secos, Salud y Culturas Mediterráneas (Tree Nuts, Health, and Mediterranean Culture) is available to those conversant in Spanish. This book reviews the different aspects of tree nuts in relation to human health and nutrition and the importance of their consumption in the context of Mediterranean cultures. The link will take you to one of the websites from which the book can be purchased.

  • Vegetarian chapter from Modern Nutrition in Health and Disease. This widely acclaimed book is a complete, authoritative reference on nutrition and its role in contemporary medicine, dietetics, nursing, public health, and public policy. Chapter 103 Nutritional Implications of Vegetarian Diets was contributed by Patricia K. Johnston, former Dean of the LLU School of Public Health, and Joan Sabaté, Chair of the LLU Department of Nutrition. The book can be purchased from Amazon.com at the link provided.
  • Vegetarian Food Guide Pyramid. This useful tool was premiered at the 3rd International Congress on Vegetarian Nutrition in 1997 and has since been enhanced with better graphics and tools. For information on the development of this food guide follow the link provided. See an online version of the updated brochure.   • Vegetarian recipes and facts. Follow this link for some helpful information on shopping and cooking for a vegetarian diet.
